
Cheesy Meaty Breakfast Biscuits
Makes about 18 biscuits
This month I got my recipe idea from a San Diego surfer and friend of Insulindependence. I wanted to do something that would be filling for a post surf or race but wanted to keep it healthy, so I used low fat turkey bacon and whole wheat flour. I tried it out on the surfer dudes at our first Breakfast Blend on the beach last Sunday and it turned out to be a stellar end to a killer swell! ;-) It was also ideal for recovery, as well as for the diabetic athlete, since it had a good mix of fats, proteins, and low GI. Peachy Oatmeal SuperMuffins
Makes 1 ½ dozen muffins or 18 servings
"I came up with this muffin recipe because a lot of muffin recipes call for loads of sugar. So I experimented with some ways to cut back on the sugar but not the flavor. These would be good to make and have stored in the freezer to reheat when you need a great comfort food that you can feel good about; complete with fruit, fiber and low carbs. In the spirit of race tapering (for our Triabetes athletes) it is perfect--Designed for athletes who are accustomed to eating a lot, but are training less, these muffins will fill you up but won't be a heavy meal that will weigh you down."
